Instant Pot Pulled Pork

Cut meat from bone and divide pork into four chunks.

Pour chicken broth, root beer and bbq sauce into Instant Pot.  Add in garlic powder, onion powder, paprika, chili powder, salt and pepper.

Whisk ingredients together.

Add the pork chunks to the Pot.

Place lid on Instant Pot, turn steam release handle to sealing positon and set Pot to Pressure Cook High for 40 minutes.

While the pork roast is cooking prepare sauce by combining more bbq sauce with maple syrup and Sweet Chili Thai Sauce. Set aside until needed.

Once Pot is done cooking, allow it to do a Natural Release for 25 minutes before venting.  Remove lid and the chunks of meat.

Leave the Pot on the Keep Warm setting. Use two forks to shred the pork chunks.

Reserve one cup of liquid from the Pot and discard the rest. Transfer shredded pork to Pot and mix with the one cup of liquid.

Stir to combine.

Toast some gluten free buns.

Serve Pulled Pork on top of buns with coleslaw as a side.

Or serve the coleslaw right on the bun.
