Air Fryer Skillet Brownies – Gluten Free

These fudgy, triple chocolate brownies are a decadent treat if you have been avoiding desserts due to a gluten intolerance.  Baked in mini cast iron skillets these brownies do not disappoint. 

 

 

 

 

 

 

 

 

This delicious recipe yields 2 thin skillet brownies or one deep skillet brownie when baked in 5.5″ cast iron skillets.  

The thin skillet brownies are perfect for adding ice cream or toppings and eating dessert right out of the skillets. 

Share as a date night treat or, depending on your appetite polish off one skillet brownie on your own.

The single skillet brownies can be cut into 4.

Serve onto plates and eat alone or add ice cream or whipped cream.

However you choose to serve up these decadent Skillet Brownies, enjoy every bite!

To make these delicious Skillet Brownies I started by melting butter in the microwave. 

To the melted butter I added granulated sugar, Bob’s Red Mill Gluten Free All Purpose Flour, cocoa, baking powder and xanthan gum.

Next I added an egg and vanilla.  I blended the mixture well.

Then I stirred in some semi sweet chocolate chips and some white chocolate chips.

After blending I divided the batter into two small cast iron skillets (5.5″).

You can also scrape all the batter into one skillet if you are not planning to eat directly from the skillets.

Next I staggered the cast iron skillets in the Pampered Chef Deluxe Air Fryer.  I placed one on the top shelf and one on the bottom shelf.

I set the Bake Setting for 16 minutes (350F).

If using only one skillet, use the center rack and set the time for 25 minutes.

At the halfway point of cooking, I rotated the two skillets.

When cooking time is completed remove skillets from the air fryer.

Allow single skillet to cool before cutting.

When eating the brownie right out of the skillet allow to cool enough that skillet is not too hot to the touch.

While still warm you can add your preference of toppings.

How to Make Skillet Brownies:

  3. Blend ingredients well.
  4. Add egg and the vanilla and beat them into the ingredients already in the bowl.
  5. Stir in the semi sweet chocolate chips and the white chocolate chips.
  6. Use a rubber spatula to either divide the mixture between 2 cast iron skillets or scrape all the batter into one skillet.  How you distribute the batter will depend on how you are serving this dessert and your situation.
  7. For the two skillet choice stagger the skillets on the air fryer trays and slide into the top and bottom shelf slots.
  8. Set the air fryer to bake 350F for 16 minutes.  Rotate the skillets at the half way mark.
  9. For the one skillet option place the skillet on the air fryer tray and slide into the middle shelf slot.
  10. Set the air fryer to bake 350F for 25 minutes.
  11. Remove skillets from air fryer.
  12. The two skillet option will produce a thin brownie that can be eaten right out of the skillet.  It leaves lots of room for ice cream, whip cream or whatever toppings you prefer.
  13. The one skillet option can be cut into four servings.
  14. Serve and enjoy!
