Baked Macaroni and Cheese – Gluten Free

Baked Macaroni and Cheese is a quick and easy recipe your whole family will enjoy.  This gluten free meal is loaded with elbow pasta, ground beef, tomato and cheese to create a hearty meal for any day of the week.

There is nothing that says comfort food quite like loads of melted cheese covering a steaming hot pasta dish!

Cook your macaroni in a pot that is oven safe and clean up is a breeze.  This is almost a one pot meal.

This hearty meal will yield 8 servings.

Every mouthful is loaded with flavour and melted cheese.

To begin making Baked Macaroni and Cheese I put some water on to boil and cooked some pasta according to the package directions.

This is the gluten free pasta that I used.

While the pasta was cooking I put some olive oil into a frying pan and turned the heat to medium.  When the oil was heated I added in a pound of lean ground beef.

I broke the ground beef up while it was cooking.

When the elbow macaroni was cooked I drained it in the sink and gave it a quick rinse.

Then I returned it to the pot over medium/low heat.

Next I added in some almond milk and a can of diced tomatoes.

After giving it a quick stir I added in 3 cups of grated marble cheddar cheese.

Once the cheese was stirred in I added the cooked ground beef to the pot.

I stirred until the meat was well incorporated into the pasta mixture.

The last addition was to sprinkle another 3 cups of the grated cheese evenly over the top of the macaroni mixture.

Then I set the pot into a preheated 400F oven for 30 to 45 minutes. The amount of time depends on how you like your cheese.  I took mine out shortly after 30 minutes but my husband said he would have liked the cheese browned more and not just melted.

Baked Macaroni and Cheese is a real comfort food recipe that can be made quickly any day of the week.

  • 1 tbsp olive oil

  • 6 cups grated marble cheddar cheese, divided

How to Make Baked Macaroni and Cheese:

  1. Preheat oven to 400F.
  2. Cook elbow macaroni according to package directions in an oven safe pot.
  3. Put olive oil into a frying pan over medium heat.
  4. Once oil is heated add the lean ground beef. Break it up while it is cooking.
  5. Grate cheese.
  6. Once macaroni is cooked drain and rinse in sink. Return to pot over medium/low heat.
  7. Add the almond milk and diced tomatoes to the macaroni. Stir.
  8. Add 3 cups of the grated cheese. Stir.
  9. Add the cooked lean ground beef to the macaroni mixture and stir until all ingredients are well combined.
  10. Sprinkle the other 3 cups of grated cheese evenly over top of the marcaroni mixture in the pot.
  11. Place the pot in the preheated 400F for 30 to 45 minutes. Time is up to personal preference. Whether you just want cheese to be melted or starting to bubble and brown.
  12. Remove from oven when it has reached your desired doneness. I took mine out just after 30 minutes.
  13. Serve and enjoy!

*If you prefer your cheese more browned cook for a few minutes longer.
