I started to make these Gluten Free Ginger Cookies by dumping some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, ground ginger, ground cinnamon, baking soda, ground nutmeg and salt into a medium sized mixing bowl.

I mixed the dry ingredients together with a spoon and set them aside.

Then I put some margarine and brown sugar into a large mixing bowl.

Using an electric hand mixer, on medium speed, I beat the margarine and brown sugar together until they were light and fluffy.

Then I added in some fancy molasses, pure maple syrup, granulated sugar and vanilla extract.

I used the electric hand mixer again to beat the ingredients until they were well mixed.

Then it was time to add in the dry ingredients that I had set aside earlier.  I used the electric hand mixer on low speed to blend the wet and dry ingredients together.

I cut some candied ginger into small bits and added them into the cookie dough.

To fold them in I used a large wooden spoon.

Once the dough was ready I used a one tablespoon scoop to transfer them to a parchment paper lined baking sheet.  I kept them a couple inches apart in case they would spread.

I placed the baking sheet in a preheated 350F oven for 8-10 minutes or until the cookies were just turning brown around the edges.

After removing the cookies from the oven I allowed them to cool on the baking sheet for a few minutes before transferring them to a cooling rack to continue cooling.

Ingredients You’ll Need to Make these Gluten Free Ginger Cookies:

  • 3 cups Bob’s Red Mill 1 to 1 Gluten Free Baking Flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3/4 cup margarine
  • 3/4 cup packed brown sugar
  • 1/4 cup fancy molasses
  • 1/4 cup pure maple syrup
  • 1 egg, large
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup diced candied ginger

How to Make Gluten Free Ginger Cookies:

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. Mix the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, ginger, cinnamon, baking soda, nutmeg, and salt in a medium mixing bowl.
  3. In a large mixing bowl, beat the margarine and brown sugar with an electric hand mixer on medium speed until light and fluffy.
  4. Add the fancy molasses, pure maple syrup, egg, vanilla and granulated sugar to the fluffy mixture in the large mixing bowl.
  5. Add 1/2 the dry mixture to the wet ingredients and beat on low speed. Add the remaining dry ingredients and again beat on low speed until well mixed.
  6. Fold the bits of candied ginger into the batter until well incorporated.
  7. Use a cookie scoop to make dough into 1 inch balls and drop them onto the prepared baking sheet.
  8. Bake in the preheated oven for 8-10 minutes or until the edges of the cookies just start to brown.
  9. Remove from oven and allow to cool on baking sheet for a few minutes before transferring to a cooling rack.
  10. Serve and enjoy!
