Instant Pot Ground Beef with Rice and Vegetables

Instant Pot Ground Beef with Rice and Vegetables is a great comfort food for these cooler days.

After working all day it is nice to come home and make an easy one pot meal that is hearty and flavourful.

To begin making Instant Pot Ground Beef with Rice and Vegetables I diced up enough onion for one cup and chopped enough mushrooms for one cup as well.

Next I turned the Instant Pot to the saute function and added 2 tablespoons of olive oil.

I dumped in the lean ground beef, onions and mushrooms.

Then I allowed this mixture to cook until the meat was lightly browned.  There was still plently of pink remaining.  

I stirred frequently and also scraped the bottom of the pot at the same time.  

This is very important in order to avoid a burn message after the  Pot comes to pressure.  I learned this from experience.

Now I added the liquids to the Pot.  Pour in the water and then the beef broth that has one packet of brown gravy powder stirred into it.

Next I added 2 cups of long grain rice and made sure not to stir the rice in.

Now I sprinkled frozen mixed vegetables over the top of all the other ingredients already in the pot.  I did not stir.

For extra flavour I dumped in some Original BBQ Sauce, maple syrup and some Gluten Free Soy Sauce.  I did not stir.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 8 minutes.

When the Instant Pot was done cooking, I turned the steam release handle to the venting position to finish with a quick release.

Now it is up to you what happens next!  

This versatile recipe can be served as soup or you can do what I did and turn it back to sauté and stir in another packet of gluten free brown gravy mix.  I stirred for a few minutes before turning off the Instant Pot.

When I added this second gravy mix at the beginning I received the burn message because it thickened too much when cooking.  Safer to add it at the end!

I allowed Instant Pot Ground Beef with Rice and Vegetables to cool before serving since it was very hot.  The mixture will thicken more when it cools.

When at a safe eating temperature serve and enjoy!

Ingredients You’ll Need to Make this Instant Pot Ground Beef with Rice and Vegetables:

  • 1 cup diced onion
  • 1 cup diced mushrooms

  • 1 1/2 lb lean ground beef
  • 2 1/2 cups water
  • 2 1/2 cups beef broth
  • 2 packets (25 grams each) Gluten Free Brown Gravy mix (divided)

  • 1 cup Original BBQ Sauce
  • 1/2 cup maple syrup
  • 1/4 cup Gluten Free Soy Sauce

How to Make Instant Pot Ground Beef with Rice and Vegetables:

  1. Turn the Instant Pot to saute and add the vegetable oil.
  2. When heated add the onions, mushrooms and lean ground beef.
  3. Scrape the bottom of the pot as you stir to prevent a burn message later. Saute for about 3 minutes. The beef will still have a lot of pink remaining.
  4. Add 2 1/2 cups water and deglaze the pot.
  5. Add the first packet of gravy mix to the 2 1/2 cups of beef broth and add this mixture to the Pot.
  6. Again make sure that the Pot has been deglazed. You will not be stirring after any of the next ingredients are added.
  7. Pour in the rice. Do not stir.
  8. Sprinkle in the frozen mixed vegetables. Do not stir.
  9. Add the BBQ sauce, maple syrup and the soy sauce. Do not stir.
  10. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 8 minutes.
  11. When finished turn the steam release handle to the venting position with a quick release.
  12. At this point it may be a thin sauce and can be served as soup.
  13. If you prefer it thicker and more like a stew turn the saute function on and add the second packet of brown gravy mix. Stir until well blended.
  14. Turn the Instant Pot off and allow the Ground Beef with Rice and Vegetables to cool a bit before serving. It will continue to thicken as it cools.
  15. Serve with biscuits or a side salad and enjoy!

I am a little hesitant about using maple syrup and BBQ, wouldn't this make it very sweet? Have you ever made it without either one or both?

Hi Todd, Thanks so much for checking out the recipe. I use Bold BBQ sauce and the maple syrup. I did not find it sweet. If you are using a sweet sauce you may want to omit the maple syrup. Depends on your preference. I have only made it with both. Thanks again and please share the type of sauce you use and how it turns out. Kathleen

This is good except two cups of rice is too much it absorbed in leaves no sauce I tweaked it just a bit and it turned out good only using one cup of rice and - no maple syrup

Hi, Thank you so much for trying this recipe. The first time I made it my liquid disappeared too. That is why I only used one packet of gravy at the beginning and then there was plenty of liquid so I added the second packet of gravy at the end. We produce our own maple syrup on the farm so I try to incoprorate it into recipes when I can. Thanks again for sharing your thoughts.
