To make these delicious brownies I started by melting margarine in an 8 cup (2 litres) microwave bowl.

To the melted margarine I added granulated sugar, almond flour, cocoa, baking powder and xanthan gum.

I used a wooden spoon to blend this mixture together well.

Next I added eggs and vanilla.  The mixture was again blended well with a wooden spoon.

After blending I scraped the batter into a square cake pan that had been lined with parchment paper.

Then I dumped some smooth peanut butter, brown sugar and almond flour into a small bowl.

I blended these ingredients together well.

Then I dropped the peanut butter mixture by spoonfuls into each 1/4 of the brownie batter already in the prepared pan.

I used a knife to work the peanut butter in to create a marbling effect.

Once you have created the marbled effect with the peanut butter mixture the brownies were ready for the oven.

I placed the pan in the centre of the preheated 375F oven and baked until a toothpick inserted in the centre came out almost clean.  About 25 – 30 minutes

I allowed the brownies to cool in the baking pan before using the parchment paper to lift them out.

Then I sliced them up and served them up to eager family members!

These are fantastic! I made them into blondies because I didn't have cocoa powder, and they turned out amazing.

Never saw "Xanthan gum" for sale at supermarket. Also, can I substitute almond butter for the almond flour? Sort of manipulate between the flours & the peanut butter? Variate?

Hi James, I get xanthan gum at a health food store or a bulk store. Not sure how those substitutions would work. If you try it please let us know how the brownies turn out. Thanks, Kathleen
