Peppermint Patties

Peppermint Patties are a nice refreshing treat as an afternoon pick me up or following an evening meal.  These gluten free candies are a great addition to your holiday dessert tray.

I used the smallest cookie cutter I own to make these delicious discs but you can choose the size that works best for you.

When using the small cookie cutter this recipe can yield about 160 mint candies. 

For the festive Christmas season I added some red and green food colouring to some of the dough.

Peppermint Patties also make a great gift any time of the year.

To begin making Peppermint Patties  I dumped cold mashed potatoes and some margarine into a large mixing bowl.

After creaming the potatoes and margarine together so there were no lumps, I added in a fair bit of icing sugar a bit at a time.

I mixed in the icing sugar until the mixture was no longer sticky.  I used my hands to knead the dough at the end.

Then I worked in some peppermint flavouring.

Once the peppermint extract had been incorporated into the dough I divided the dough into three portions.

This step is not necessary if you are leaving all the Peppermint Patties white.

Then I added red and green food colouring to two of the portions.

At this point I used my hands to knead in the colours.

Next I sprinkled icing sugar onto a pastry sheet and rolled out each portion. The rolled out dough was about 1/4″ thick.

You choose a thickness that works for you.

Then I used the smallest cookie cutter I had to cut out discs of the dough.  You can make them any size you want.

I transferred the discs of dough to a wax paper lined baking sheet.

I allowed the discs to dry out.  This takes a few hours or overnight.

When the discs are dried out you have the option of dipping them in chocolate.  They are also quite tasty without the chocolate coating.

For the dipping sauce I melted some chocolate chips and parowax in a double boiler.

Using a fork I dipped each pattie into the chocolate and then returned it to the wax paper to dry.

I left the Peppermint Patties alone until the chocolate was firm.

After letting the candies set, add them to any dessert tray or box them up for gifts!

  6. Sprinkle some more icing sugar onto a pastry sheet and roll the pattie dough out until it is about 1/4″ thick.
  7. Use a cookie cutter, you choose the size, to cut discs out of the dough.
  8. Transfer the discs to a wax paper lined baking sheet.
  9. Allow the discs to dry out for 3 hours or even overnight.
  10. When discs are dried out melt the chocolate chips and parowax in a double boiler.
  11. Use a fork to dip the discs into the chocolate and return to the wax paper lined baking sheet to set.
  12. Once set they are ready to add to dessert trays, freeze or box up for gifts.
  13. Enjoy!

*This recipe can easily be cut in half.
