Flourless Chocolate Cookies

Whisk some icing sugar, cocoa powder, meringue powder and salt with a fork in a medium bowl to combine.

Whisk together eggs and vanilla extract with a fork in a small bowl.

Make a well in the center of the dry ingredients and pour in the eggs.

Stir the mixture with the fork until it just begins to come together.

Add some chocolate chips and stir until well combined.

The mixture will be quite sticky and very dark.

Use a 1 tbsp scoop to drop balls of dough onto parchment paper lined baking sheet. These cookies will spread so leave space between.

Bake for 10-12 minutes in a preheated 375F oven. Check after 10 minutes. Remove when tops are set.

Cool on the baking sheet for 10 minutes.

Transfer cookies to a cooling rack.
