Gluten Free Corn Casserole Recipe - Dairy Free

Chop up a yellow onion.

Pour 2 1/2 cups of almond milk into a medium size sauce pan over medium heat.

Add some granulated sugar, salt, onion and black pepper.

Mix  1/4 cup of almond milk with 1/4 cup of gluten free flour to form a paste.

Whisk the paste into the milk mixture in the sauce pan.

Continue stirring until the mixture thickens and just comes to a boil.

Reduce heat to med/lo, add corn to the sauce.  Stir to combine.

Add some bacon crumble to the pot and stir to combine.

Allow the corn mixture to simmer for 10 minutes.

 Prepare topping by first crushing up some Schar crackers.

Crush some sour cream and onion chips.

Stir the crushed ingredients in a small mixing bowl with an egg, brown sugar and melted margarine.

Transfer the corn mixture to a greased  casserole dish.

Sprinkle the prepared topping over the corn mixture.

Bake in a preheated 400F oven for 10 - 15 minutes or until topping is browned.
