Gluten Free Ginger Cookies Recipe

Mix some Bob's Red Mill 1 to 1 Gluten Free Baking Flour, ginger, cinnamon, baking soda, nutmeg, and salt in a medium mixing bowl.

Dump some margarine and brown sugar into a large mixing bowl.

Beat with an electric hand mixer on medium speed until light and fluffy.

Add some fancy molasses, pure maple syrup, egg, vanilla and granulated sugar to the fluffy mixture in the large mixing bowl.

Beat again with the electric hand mixer.

Add 1/2 the dry mixture to the wet ingredients and beat on low speed.

Add the remaining dry ingredients and again beat on low speed until well mixed.

Fold some bits of candied ginger into the batter until well incorporated.

Use a cookie scoop to drop dough into 1 inch balls onto parchment paper lined baking sheet.

Bake in a preheated oven for 8-10 minutes or until the edges of the cookies just start to brown.

Remove from oven and allow to cool on baking sheet for a few minutes.

Transer to cooling rack.
