Gluten Free Peach Crisp Recipe

The easiest way to peel  peaches is to slice an "X" on the bottom of each one.

Then blanch them in boiling water for one minute.

After blanching, peel and slice enough to make 5 cups.

Spread the sliced peaches out in an 8" X 8" baking pan.

Combine some granulated sugar, nutmeg and cinnamon.

Sprinkle the sugar mixture over the peaches in the pan.

Prepare topping by combining some gluten free quick oats, brown sugar, margarine, Bob's Red Mill 1 to 1 Gluten Free Baking Flour and salt in a bowl.

Use a fork or pastry blender to combine until crumbly.

Sprinkle topping evenly over mixture in baking pan. Bake in a  preheated 375F oven for 30 - 35 minutes or until brown and bubbling around the edges.

Remove from oven and allow to cool in pan.

Once cooled slice into squares.

Serve warm or cold.

Serve it plain or add whipped cream or ice cream if you prefer.
