Ground Turkey and Potato Casserole Recipe

Wash and pierce some potatoes.  Cook on high power in microwave until almost fully cooked.

Once cooked remove from microwave and cut in half to let some heat out so easier to cube later.

While some olive oil heats in a pan dice a yellow onion.

Add some ground turkey and diced onion to the frying pan.

Measure in some oregano, sage, basil, salt and pepper.

Cook stirring often and crumbling the meat until onions are tender and meat is almost cooked through.

While meat cooking prepare sauce by melting some butter over low heat.

 Whisk in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour until creamy.

 Pour in some almond milk. Whisk to combine.

Turn heat to medium and stir occasionally until it comes to a boil. Remove from heat when it boils.

Grate some cheddar cheese or whatever cheese you are using.

You can also cube the cooked potatoes.

When the meat is almost cooked add some frozen vegetables to the frying pan and stir to combine.

Stir  1/2 cup of grated cheese into the milk sauce.  Stir in some salt and pepper as well.

Stir some sour cream into the meat mixture.

Spread the meat mixture out evenly in a greased baking pan.

Distribute the cubed potatoes out evenly over the meat.

Pour the prepared sauce over top of the potatoes.

Sprinkle top of casserole with  1 cup of grated cheese.

Bake in a preheated oven for 50 – 60 minutes or until potatoes and cheese are browned to your taste.

Remove from oven and allow to cool for a couple minutes.

Serve with your favourite sides.
