Air Fryer Rhubarb Muffins - Gluten Free

Dice enough rhubarb to make 1 cup.

Melt some butter in the microwave.

Add the melted butter, eggs, granulated sugar and vanilla extract to a mixing bowl and beat with an electric hand mixer until frothy.

Measure in some Bob's Red Mill 1 to 1 Gluten Free Baking Flour, baking powder, ground cinnamon, nutmeg and salt.  Beat to combine.

Pour in some almond milk and beat on low speed until well combined.

Fold in the diced rhubarb and white chocolate chips with a large wooden spoon.

Spray a muffin pan that fits in air fryer with cooking spray.

Scoop batter into prepared muffin pan. If I want 6 muffins I heap the batter in the muffin pan.  If you want more muffins fill just to the top.  I get 8 muffins that way.

Place muffin pan in the air fryer.  Set to Air Fry on 400F for 5 minutes.  After 5 minutes set to Bake at 350F for 10 more minutes.  Check with a toothpick.

After removing muffins from oven allow them to cool in pans for about 10 minutes.

After 10 minutes flip muffins onto their sides or turn out onto a cooling rack to cool.
