How to Make Almond Almond Pan Cookies - Gluten Free

Line a 10x15 inch cookie sheet with gluten free soda crackers making sure to cover the whole surface. Break crackers if necessary to cover.

Melt some butter in a small sauce pan over medium heat.

When melted add  brown sugar and stir until it comes to a boil.

Allow to boil for 2 1/2 minutes and then remove from heat.

Sprinkle  sliced almonds evenly over the crackers. Slowly spoon over the crackers in the pan. Use a fork if necessary to replace almonds that get moved around.

Place pan in the 400F oven to bake for 6 to 7 minutes. Do not let burn.

Remove from oven.

If desired drizzle melted chocolate over top.

Allow to cool for one minute and then slice. Allow to continue cooling for another 10 to 15 minutes before again cutting into squares and removing to cooling rack.

When chocolate has hardened serve and enjoy!
