How to Make Apple Pudding - Gluten Free

Peel, core and cut some apples into chunks. Spread apples out in greased  baking pan.

Sprinkle apples with some cinnamon.

Combine some GF flour, meringue powder, granulated sugar, baking powder and salt in a large mixing bowl.

Measure some maple syrup, olive oil, almond milk and an egg into the dry ingredients.

Stir until blended.

Pour over apples in the baking pan.

Mix 2 cups of boiling water with a cup of sugar and some corn starch.

Pour this liquid over the batter and the apples in the pan.

Bake in 350F oven for 40-45 minutes or until cake springs back when touched. Or you can use a toothpick inserted in center of the batter.

Allow to cool slightly before serving. Sauce will thicken as it cools.

Serve alone or with whipped cream or ice cream. Enjoy!
