How to Make Banana Bars - Gluten Free

Dump some granulated sugar and margarine into a large mixing bowl. Beat until creamy with an electric hand mixer.

Add eggs, vanilla extract and apple sauce. Beat with electric hand mixer until smooth.

Blend in some mashed banana quickly with the electric hand mixer.

Measure Bob's Red Mill Gluten Free Baking Flour, baking soda, xanthan gum, salt and ground cinnamon into the mixing bowl.

Stir  dry ingredients into the wet with a large wooden spoon just until combined.

Spray bar pan with cooking spray.

Spoon the batter into the prepared bar pan, filling almost to the top.

Get optional toppings ready if using.

Sprinkle them on top of the batter.

Place bar pan in preheated 350F oven for 15 to 20 minutes or until a toothpick inserted in center of bars comes out clean. They will be golden brown.

Allow the bars to cool completely in the pan. Once cooled slide a knife around edges to separate bars.

Pop out of pan. I use a silicone bar pan to make this easier.
