How to Make Blondie Cookies -  Gluten Free

Measure some gluten free flour, baking powder, and salt into a large bowl.

Whisk or stir until combined leaving a well in center. Set aside.

Dump some butter and butterscotch chips into a large microwave safe bowl.

Heat butter and butterscotch chips on low power for 20 second intervals, mixing well in between intervals.

Continue until mixture is smooth.

Stir vanilla extract into melted butterscotch. Stir in white and brown sugars until well combined.

Beat in 4 eggs, two at a time.

Stir in some almond milk.

Add the butterscotch mixture into the large bowl with the dry ingredients.

Stir until just combined.

Fold in some white chocolate chips.

Stir until just combined.

Line a cookie sheet with parchment paper. Lightly spray with cooking spray.

Scoop the batter onto the prepared cookie sheet with a 1 tbsp scoop . Leave space for spreading.

Bake in  preheated 350F oven for 10 - 12 minutes or until set around the edges.

Remove from oven.

Immediately press more butterscotch chips and white chocolate chips into warm cookies if desired.

Allow cookies to cool on pan for a few minutes then transfer to a cooling rack.
