Crock Pot Pork Chops with Mushrooms

Pour some olive oil into a skillet and set to medium heat.

Slice some onion and chop up some mushrooms. Place onions and mushrooms in crock pot.

Once skillet is heated, sear the pork chops on both sides.

Sprinkle paprika and parsley on top of the vegetables in the pot.  Do not stir.

After searing, place the pork chops on top of the vegetables in the pot, in a single layer.

Pour broth into skillet and scrape any brown bits from bottom of pan.

Pour broth mixture over the pork chops in the crock pot.

Place the lid on the crock pot.

Set crock pot to cook on low for 6 hours.

After 6 hours remove the lid but leave crock pot on.

Carefully remove pork chops and set aside.

Stir in some cream cheese until melted.

Prepare a corn starch slurry and then pour it into the crock pot.

Continue stirring until sauce thickens.

Return pork chops to the crock pot and push them gently down into the sauce.

Allow everything to simmer together for about 5 minutes.
