Crock Pot Teriyaki Chicken and Rice

Grease crock pot well.  I used cooking spray.

Drain pineapple juice into a measuring cup.  I had one cup.

Add pineapple juice and water to crock pot.  You want to have two cups of liquid.

Cut up some chicken breasts into bite size pieces.

Cut up some baby carrots.  Enough to make three cups.

Sprinkle long grain white rice into the liquid in crock pot.

Pour some teriyaki sauce into the crock pot.

Add some ground ginger, pepper and salt to the crock pot.  Stir the ingredients slightly.

Add the cut up chicken breasts to the liquid making sure chicken is spread out evenly.

Spread some pineapple tidbits out over the chicken.

Place the carrots on top of a piece of tinfoil.

Place another piece of tinfoil on top and seal.

Place the tinfoil pouch on top of the chicken.

Then place the lid on the crock pot.

Set the crock pot to low for 8 hours.

Just before cooking time is complete cut up three green onions.

Once cooked remove lid and the carrots.

Stir in the cut up green onions.

Open tinfoil and then stir in carrots.

Stir in more of the teriyaki sauce.
