How To Make Easter Egg Pie

Chop some Cadbury Creme eggs into small pieces.

Prepare filling by whisking together some almond milk, 3/4 cup of granulated sugar, 3 egg yolks and some corn starch in a microwave safe bowl.

Place bowl in microwave on Power Level High for 4 -6 minutes or until the filling begins to bubble and thicken. Stir two times during heating.

Remove from microwave and whisk in the pieces of Cadbury Creme egg that were prepared earlier.

Allow to cool for 5 minutes, stirring once.

While filling is cooling prepare some meringue by beating some egg whites with an electric hand mixer until soft peaks form.

Beat in 1/4 cup of granulated sugar and then continue beating for 2 minutes.

Prepare a graham crust from scratch or use a gluten free store bought graham crust.

Pour the pie filling into the prepared graham crust.

Now use your imagination to complete the pie.  You could make little meringue nests.

Bake in a preheated 400F oven for about 3 - 5 minutes or until meringue is turning golden brown.

Garnish with eggs in meringue nests.

Or cover the whole pie with meringue.

Allow to cool before serving so it can set. For quicker setting you can refrigerate.
