Festive Fruit Cookies - Gluten Free

Put 2 cups of raisins in glass measuring cup and pour boiling water over them. Let them sit in water for 5 minutes and then drain.

Measure some shortening and granulated sugar into a large mixing bowl.

Use an electric hand mixer to cream the shortening and sugar together.

Add in large eggs and some  vanilla extract.

Use the electic hand mixer to blend them into the creamed mixture.

Dump the drained raisins into the batter and stir them in with a large wooden spoon.

Measure Bob's Red Mill Flour, salt, cinnamon, baking soda, baking powder, nutmeg and cloves into the bowl.

Combine the dry and wet ingredients with the wooden spoon.

Dump in a cup of chopped mixed fruit and again stir to combine.

Scoop the cookie batter onto a parchment paper lined  baking sheet.

Bake in a 375F oven for 8-10 minutes or until they are golden brown.

Remove cookies from the oven and allow them to cool slightly on the pan.

Transfer cookies to a cooling rack.
