Festive Green Bean Casserole - Gluten Free

Break up some gluten free bread for the stuffing topping into a large mixing bowl.

Dice 1/2 a yellow onion and one stalk of celery. Add them to the bread in the bowl.

Melt some margarine in the microwave and pour it over celery and onion. Add sage, salt and pepper to some chicken broth.

Pour broth over stuffing as well. Mix well and set aside.

Slice more yellow onion and one cup of carrots. Cut cranberries in half and measure out the chopped walnuts.

Add olive oil to a frying pan and turn to medium heat. Saute the onion, carrots, cranberries and walnuts in the pan until the onion is just beginning to soften.

 In a large sauce pan melt some margarine over medium heat.  Stir in some gluten free flour to form a paste. Pour in almond milk and stir until smooth.  Remove from heat just before it boils.

Stir in some onion powder, more salt and pepper and then add the sauteed vegetables.

Add some drained green beans.

  Stir to combine.

Spread the green bean mixture evenly in a greased 9x13 inch pan.

Top with the stuffing that was set aside earlier.

Bake in a 375F oven until topping is golden brown and sauce is bubbling.

 Remove from oven.
