Festive Shortbread Cookie Bars - Gluten Free

Measure some softened butter and egg whites into a large mixing bowl.

Beat with an electric hand mixer until creamy.

Add some icing sugar and beat with the electric hand mixer until well blended.

Add Bob's Red Mill 1 to 1 Gluten Free Flour Blend and salt. Use the elecric hand mixer on low speed to combine until a soft dough forms.

Stir in some mini chocolate chips and chopped mixed fruit.

Dump the batter onto a greased 10" x 15" cookie sheet.

I used a piece of plastic wrap to help with spreading.

Bake at 325F for 24-26 minutes until golden brown around the edges and starting to brown on the top.

Remove from oven and allow to cool slightly in pan before slicing.

Cool completely before serving.
