How to Make Flourless Chocolate Brownies

Mash enough cooked sweet potato to make 1/2 cup. Dump sweet potato, peanut butter, egg, sugar, cocoa powder, vanilla and baking soda into mixing bowl.

Beat the ingredients with an electric hand mixer, on low and then high speed, until the batter becomes smooth and creamy.

Scrape the batter into a greased and parchment paper lined baking pan.

Sprinkle some chocolate chips over the top.

Bake for 25-30 minutes or until a toothpick inserted in center comes out clean.

Remove brownies from oven and let them cool in the pan for 15-20 minutes

Use parchment paper to lift brownies out of pan to finish cooling on a rack.

When cooled, cut into squares. Serve and enjoy.
