Fruity Pebbles Cookies - Gluten Free

Dump margarine and granulated sugar into a large mixing bowl. Use an electric hand mixer to cream them together on medium speed.

Add an egg and vanilla extract.  Beat again on medium speed to combine.

Measure in some Bob's Red Mill 1 to 1 Gluten Free Baking Flour, baking powder and salt.

Use electric hand mixer on low speed until dry ingredients have been incorporated into the dough. Finish combining with large wooden spoon.

Work in the Fruity Pebbles cereal.

Transfer half of the cookie dough to another mixing bowl and stir in some cocoa powder.

Form each portion of dough into a flat log.

Place one on top of the other and roll to make sure they are sealed together. Get creative here and choose your own way to work the two sections of dough together.

Slice the dough into 1/2" or 1/4" slices depending on your preference.

Transfer the dough slices to a parchment paper lined baking sheet.  You may need to reform slightly.

Bake in preheated 350F oven for about 13 minutes for 1/2" cookies or about 9 minutes for 1/4" cookies.

Allow cookies to cool on cookie sheet for a couple of minutes before transferring them to cooling rack to completely cool.

Serve up these colourful cookies on their own or add them to a dessert tray.
