How to Make Gingerbread Cake - Gluten Free

Beat some margarine and brown sugar together with an electric hand mixer until light and fluffy.

Beat in some fancy molasses.

Add eggs and lemon juice. Beat again.

Measure in some 1 to 1 Gluten Free Baking Flour, meringue powder, ground cinnamon, ground cloves, ground nutmeg, ginger and salt.

Stir ingredients until well blended.

Stir boiling water and baking soda together and then quickly add them to the batter in the mixing bowl.

Stir in 2 tablespoons of finely chopped crystallized ginger.

Scrape the batter into a greased  9" x  13" baking pan.

Bake in a 350F oven for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.

After removing from the oven cool the cake completely in the pan.

If frosting, mix more finely chopped crystallized ginger into some Betty Crocker White Frosting.

After frosting the cake, cut into squares.

Or serve and enjoy dusted in some icing sugar!
