How To Make Gluten Free Au Gratin Potatoes

Wash some potatoes. Thinly slice the potatoes. I use a mandoline slicer.

Melt some butter in a large skillet or sauce pan over medium heat.

Once melted stir in some gluten free flour and corn starch to make a paste.

Stir in some dry mustard, salt and pepper.

 Gradually pour in some almond milk.

Continue cooking over medium heat stirring until it boils and thickens. Turn off the heat.

Shred some cheese.

Add it to the milk mixture. Stir until melted.

Dice some onion and add it to the mixture.

Add the sliced potatoes and stir to coat.

Grease a 2 - 3 litre casserole.

Scrape the potatoes into the prepared casserole dish.

Cover and bake in a 400F oven for 1 hour.

Remove lid and continue to bake for another 35 minutes.

Remove from oven.
