Gluten Free Corn Casserole - Dairy Free

Chop up a yellow onion.

Pour some almond milk into a medium size sauce pan over medium heat.

Add some granulated sugar, salt, onion and black pepper.

Mix a bit of almond milk with  gluten free flour to form a paste.

Whisk paste into milk mixture in the sauce pan. Continue stirring until mixture thickens and just comes to a boil.

Reduce heat to med/lo, add  corn to the sauce.  Stir to combine.

Add some bacon crumble to the pot and stir to combine. Allow the corn mixture to simmer for 10 minutes.

Prepare topping by first crushing up some Schar Entertainment crackers.

Crush some sour cream and onion chips.

Stir the crushed ingredients in a small mixing bowl with egg, brown sugar and melted margarine.

After 10 minutes transfer the corn mixture to a greased casserole dish.

Sprinkle the prepared topping over the corn mixture.

Bake in a preheated 400F oven for 10 - 15 minutes or until topping is browned.

Remove from oven.
