Gluten Free Peanut Butter Cookies

Add peanut butter and shortening to a large mixing bowl.

Use an electric mixer to cream these ingredients together.

Add some vanilla and eggs to the mixing bowl.

Add  flour, brown sugar, sugar, baking soda, salt and xanthan gum to the creamed mixture. Mix.

Use a scoop or tablespoon to drop balls of dough onto a parchment lined baking sheet. Use a fork to slightly flatten the dough.

Place in a preheated 350F oven and bake for 8 -10 minutes. Remove from oven when edges are brown and tops are slightly darkened.

Allow to cool for a minute on the baking sheet before transferring them to a cooling rack.
