Gluten Free Whipped Shortbread Cookies

Dump some softened butter and icing sugar into a mixing bowl.

Cream together using an electric hand mixer.

Continue using the electric hand mixer to beat in some corn starch and vanilla.

Add some Bob's Red Mill 1 to 1 Gluten Free Baking Flour in 3 separate additions.

Beat until light and fluffy.

Drop by spoonfuls onto parchment paper lined baking sheet or use a cookie press to make shaped cookies.

Bake in a 325F oven for 14-16 minutes or until just starting to turn golden brown around bottom edges.

Allow to cool completely before serving.

If making drop cookies you may wish to decorate with pieces of red or green glazed cherries.  Enjoy!
