How To Make Harvest Chicken Casserole

Peel, cut and cube some sweet potatoes.

Grease a 9" x 13" baking pan.  You could also use a small roasting pan.

Spread the sweet potato out in the prepared baking pan.

Trim and quarter some brussel sprouts.

Add the brussel sprouts to the baking pan.

Cube a potato.  Dice a yellow onion.

Add potato and onion to the baking pan. Drizzle with olive oil.

Measure in some thyme, paprika, salt and pepper.  Stir to combine.

Pour some chicken broth over the ingredients in the baking pan.

Cover the baking pan and bake for 25 minutes in the preheated 375F oven.

While vegetables are cooking cut up some cooked chicken.

Cut up some apple.

Remove vegetables from oven.

Stir in the chicken, apple and cranberries.

Fold in some cooked rice.

Return to the oven uncovered for 20 minutes.

Remove from oven.
