How to Make Hobo Casserole

1

Dice some mushrooms and a yellow onion.

2

Prepare sauce by combining 3 cups of almond milk with onion powder paprika, pasta sauce, salt and pepper over medium/low heat.

3

Make a paste with remaining almond milk and some Bob's Red Mill 1 to 1 Gluten Free Baking Flour.

4

Pour the paste into the almond milk and whisk to combine.

5

Add the diced mushrooms to the sauce. Stir occasionally until boils and thickens.

6

While the sauce continues to cook slice some potatoes thinly. I used a mandoline slicer.

7

Press some extra lean ground beef into the bottom of a 9" x 13" baking pan.  Sprinkle with the salt and pepper.

8

Spread the diced onions over top of the meat. Place a layer of potatoes on top of the meat.

9

Cover the potatoes with some cheese slices. Pour the thickened sauce over the cheese slices.

10

Cover with tinfoil and place in a preheated 350F oven for 90 minutes.

11

Uncover and sprinkle crushed potato chips on top of casserole.  Return to the oven for 5 to 10 minutes.

12

Allow the casserole to sit for a few minutes before serving.
