Instant Pot Cheesy BBQ Ground Beef and Rice

Dice the yellow onion.

Turn Instant Pot to the Saute Less function for 10 minutes. Add the olive oil and some lean ground beef.

Add the diced onion and stir occasionally to break up meat. It will still be slightly pink when Pot turns off.

Add one cup of water to deglaze the Pot. It is important to scrape any brown bits from bottom of Pot.

Add more water, salt and pepper.

Sprinkle in some rice. Press the grains down into the water but do not stir.

Dump 3/4 cup of bbq sauce into the Pot. Do not stir.

Place lid on Instant Pot, turn steam release handle to  sealing position and set Pot to Pressure Cook High for 4 minutes.

While ground beef and rice cook make sauce in small bowl by combining bbq sauce, sweet chili Thai sauce and maple syrup.

Once Pot is done cooking, allow it to do a Natural Release for 5 minutes before turning steam release handle to venting position.

Stir the contents of the Pot together well.

Add the prepared sauce and the shredded cheese.

Stir until the cheese is melted.

Serve up a plate of tasty goodness.

Reserve some of the grated cheese or have some on hand for garnishing.
