Instant Pot Cheeseburger Rice

Pour olive oil into Instant Pot and turn Pot to Saute Less function for 8 minutes. Add some ground beef and break it up.

Add some diced onion and cut up mushrooms. Stir occasionally.

When Pot turns off the beef will still be slightly pink.

Pour in some beef broth and use it to deglaze the Pot, scraping any brown bits off the bottom.

Add water and a can of diced tomatoes. Do not stir.

Sprinkle in some rice. Do not stir. Push it down into the liquid.

Place lid on Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 7 minutes.

Crumble cooked bacon and cut up the dill pickles. Once Pot is done cooking, immediately turn steam release handle to venting position.  Remove lid.

Give the contents a quick stir.

Add some crumbled bacon and stir.

Add some shredded cheese and stir.

Add some dill pickles and give a quick stir.
