How to Make Instant Pot Lemon Chicken


Turn Instant Pot to the Saute Function and add olive oil. Brown boneless, skinless chicken thighs in two batches.


After browning set the chicken thighs aside.


Add zest and juice of one lemon to some chicken broth. Pour the broth into the Pot and use it to deglaze. 


Place a trivet in the Pot and arrange all the chicken thighs on top of it.


Place lid on the Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 7 minutes.


Once Pot is done cooking allow it to Natural Release for 2 minutes before turning steam release handle to venting position to finish with a quick release.


After removing chicken thighs turn the Pot to the Saute Function and add some lemon pie filling powder. Stir until the sauce thickens.


Return the chicken thighs to the Pot and stir to coat them with the sauce.


Serve and enjoy by pouring extra sauce over the thighs when serving.
