Instant Pot Lemon Pepper Chicken and Rice

Slice chicken breasts into strips.

Set Instant Pot to Saute Normal for 6 minutes and saute chicken breast strips in oil, stirring occasionally.

When the Instant Pot turns off the chicken will still be slightly pink.

Add some water and scrape the bottom of the Pot well to deglaze.

Pour some chicken broth, lemon juice and lemon zest into the Pot.

Add rice to the Pot. Do not stir. Add some almond milk and lemon pepper seasoning to the Pot. Do not stir.

Place lid on Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 8 minutes.

When Pot is done cooking, allow it to natural release for 3 minutes before venting.  Remove lid and stir well.

Mix some lemon juice and corn starch together well.

With Pot set to Saute stir in the corn starch slurry.

After sauce thickens leave the chicken and rice to sit for a few minutes before serving.
