Instant Pot Peanut Butter Banana Bites - Gluten Free

Dump some granulated sugar and margarine  into a mixing bowl.

Cream together with an electric hand mixer.

Add in  2 eggs and some peanut butter.

Beat again with electric hand mixer.

Add some Bob's Red Mill 1 to 1 Gluten Free Baking Flour.  Dump in  mashed banana, baking powder and salt. Use a large spoon to stir in these ingredients.

Fold in some peanut butter chips and semi-sweet chocolate chips with the large spoon.

Spray slicone egg molds with cooking spray.

Scoop batter into prepared silicone egg molds until almost full.

Spray tinfoil with cooking spray and cover egg molds tightly.

Pour water into Instant Pot. Stack egg molds on top of trivet in Pot.  Place lid on Pot, turn  steam release handle to sealing position and set Pot to Pressure Cook High for 12 minutes.

Once Pot is done cooking, allow it to Natural Release for 10 minutes before venting. Remove  lid and carefully lift out the trivet holding the egg bite molds.  Immediately remove tinfoil.

Let the Bites cool in the molds for about 10 minutes. After 10 minutes invert onto a cooling rack.

Serve them up when cooled.

You could also dip in chocolate glaze once they have cooled.
