Instant Pot Pork Roast with Baby Carrots and Potatoes


Brush a pork roast with mustard. Sprinkle with a pinch of salt and pepper to taste.


Turn the Instant Pot to the Saute normal function When heated, brown all sides of the pork roast.


 Remove the pork roast form the pot and set aside.


Add 2 cups of water to the Instant Pot. Use a wooden scraper and deglaze. 


Place a trivet inside and place the pork roast on top. Pour the carrots and small potatoes around the roast.


Put the lid on the Instant Pot, turn the steam release handle to the sealing position and set to Pressure Cook High for 18 minutes.


After the 18 minutes allow it to do a Natural Release for 15 minutes before turning the steam release handle to the venting position.  Remove food.


Retain 2 cups of the drippings. Add 2 pouches of gluten free gravy mix. Turn the Instant Pot to Saute normal function and stir until gravy thickens.
