Instant Pot Sirloin Tip Roast with Gravy and Veggies

Rub roast with steak spice and brush with Dijon mustard.

Set Instant Pot to saute and sear the roast.

Remove the roast from the pot and add mushrooms and onions. Stir and cook.

Add a can of pepsi and deglaze the pot.

Add beef broth. Place trivet in the pot with the roast on top and rub with garlic.

Wrap some carrots and then some potatoes in tinfoil and place them around the roast.

Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 60 minutes.

While the Instant Pot is doing a natural release. Heat some almond milk and margarine in a saucepan.

Remove the lid, vegetable packets, roast and trivet from the Pot. Cover the roast.

Add some gravy packets to the liquid in the Pot and turn the Pot back to the Saute Less function for 5 minutes.

Add potatoes to the milk and margarine and mash. Slice roast.
