Instant Pot Strawberry Banana Loaf

Dump some granulated sugar and margarine into a large mixing bowl.  Beat using an electric hand mixer until combined.

Add eggs, vanilla and 3/4 cup mashed strawberries. Continue to beat with electric hand mixer until batter is very light and fluffy.

Add sifted flour to mixing bowl. Measure in some mashed banana, baking powder, baking soda and salt.

Use a large rubber spatula or spoon to fold in the flour and other dry ingredients just until combined.

Grease and flour a 6 cup bundt pan for your Instant Pot.

Scrape batter into the prepared bundt pan.

Add water, trivet and bundt pan to Instant Pot. Place lid on Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 50 minutes.

Once Pot is done cooking, allow it to Natural Release for 15 minutes before venting. Remove lid and then carefully remove bundt pan. Immediately remove tinfoil.

Allow to cool in pan for 10 minutes.

After 10 minutes invert on to serving plate. You could serve as is or...

melt some chocolate chips and margarine for  glaze in the microwave for 30 seconds.

Stir in some mashed strawberries.

Add some icing sugar and stir.

Stir in almond milk until you reach desired consistency.

Spoon over the Strawberry Banana Loaf.

Allow glaze to harden.

Serve.
