Instant Pot Wild Turkey Breast with Mashed Potatoes

Peel and cut up potatoes.

Turn Instant Pot to Saute and sear a seasoned turkey breast in olive oil for about 3 minutes per side.

Remove turkey breast from the Pot. Add chicken broth and scrape the bottom of the pot very well to deglaze.

Return the turkey breast to the Pot placing it on a wire rack.

Place a steamer basket with the potatoes on top of the turkey.

Place lid on the Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 16 minutes.

When the Pot is done cooking, allow it to natural release for 6 minutes. Turn steam release handle to venting position to finish with a quick release.

Using oven mitts carefully remove the potatoes and the turkey breast.

Pour 2 cups of broth into measuring cup and add two packets of gravy mix to it.  Stir well then place gravy in microwave on high for 3 minutes, stirring once.

Return potatoes to Instant Pot. Add some of remaining broth and margarine. Use a potato masher to make the mashed potatoes.

Slice the turkey breast and serve with your favourite fixings.
