Instant Pot Wild Turkey Stew - Gluten Free

Cut up some celery, red pepper, onion, mushrooms and mince the garlic. Cut up potatoes.

Lay out a wild turkey breast and rub in some Montreal Chicken spice.

Turn Instant Pot to the Saute Less function for 8 minutes and add 2 tbsp olive oil. Sear turkey on both sides.

Remove the turkey breast and add in a tbsp of olive oil. Dump in the celery, red pepper, mushrooms and onion.

When Pot shuts off add a can of Pepsi and use it to deglaze the Pot. Scrape any brown bits from the bottom.

Add some chicken broth.

I used my egg holder as my "trivet". Place wild turkey breast on trivet. Rub minced garlic over top of breast.

Spread the chunks of potato and baby carrots around the wild turkey breast.

Place lid on Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 16 minutes.

Once Pot is done cooking allow it Natural Release for 10 minutes before venting. Remove the lid.

Lift out the wild turkey breast and set aside.

Remove trivet and turn Pot to Saute Less function  for 5 minutes.  Stir in gravy packets and corn starch slurry.

Cut up the wild turkey breast into small pieces.

Dump cut up pieces of turkey into Pot.

Stir to combine. Turn Pot off when gravy is bubbling.

Allow to cool for a few minutes before serving.
