How to Make Mini Egg Brownies with Almond Flour

Melt 1/2 cup margarine or butter in a large microwaveable bowl.

Add granulated sugar, almond flour, cocoa, baking powder and xanthan gum to bowl. Blend ingredients well.

Add 2 eggs and some vanilla and beat them into the ingredients already in the bowl.

Use a rubber spatula to scrape mixture into a parchment paper lined pan.

Spread some mini eggs out evenly over the top of the brownie batter.

Put pan on middle rack in oven. Bake for 25-30 minutes or until a toothpick inserted in center comes out almost clean.

Let cool in pan.

Use parchment paper to lift brownies from pan to slice.

Cut into squares.
