How to Make Peppermint Patties

Dump some mashed potatoes and margarine into a large mixing bowl.

Cream them together to get rid of any lumps. Add icing sugar a bit at a time until the dough is no longer sticky.  You will have to knead with your hands to get it all worked in.

Add some peppermint extract and knead the dough so that it is well incorporated.

If making different colours of the patties divide dough at this time.

Knead in the food colouring.

Sprinkle some more icing sugar onto a pastry sheet and roll the pattie dough out until it is about 1/4" thick.

Use a cookie cutter, you choose the size, to cut discs out of the dough. Transfer to wax paper lined baking sheet.

Allow the discs to dry out for 3 hours or even overnight.

When discs are dried out melt the chocolate chips and parowax in a double boiler. Use a fork to dip the discs into the chocolate.

Return to the wax paper lined baking sheet to set.

Once set they are ready to add to dessert trays, freeze or box up for gifts.
