Raisin Oat Bran Muffins - Gluten Free

Add vinegar to almond milk. In a large mixing bowl dump oat bran, milk with vinegar added and the baking soda.

Stir to combine and then let sit for 10 minutes.

To a small mixing bowl add some vegetable oil, brown sugar, maple syrup, egg and meringue powder (if have).

Whisk to combine.

Add some raisins.

Stir in the raisins.

Scrape raisin mixture into other mixing bowl and combine.

Add some Bob's Red Mill Gluten Free All Purpose Flour, baking powder ground cinnamon, xanthan gum and salt.

Stir until just combined.

 Scoop the muffin batter into greased muffin tins.

Bake at 375F for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Remove from the oven and allow to cool in the pan for about 10 minutes.

Flip them on their sides or transfer to a cooling rack.
