How to Make Rhubarb Cookies - Gluten Free

Thinly slice enough rhubarb to measure 1 cup.

Dump shortening and brown sugar into a large mixing bowl. Use an electric hand mixer to cream them together on medium speed.

Add egg and vanilla extract. Beat again on medium speed to combine.

Measure in some Gluten Free Baking Flour, rolled oats, ground cinnamon, baking soda and salt. Combine.

Fold in some white chocolate chips and the sliced rhubarb.

Use a 1 tablespoon scoop or spoon to drop the cookie dough onto the prepared cookie sheet.  Press cookie dough down slightly.

Bake in a preheated 350F oven for 12 - 14 minutes or until golden brown around bottom edge.

Allow cookies to cool on cookie sheet for about 10 minutes.

Transfer to cooling rack to finish cooling.
