How to Make S'mores Brownies - Gluten Free

Melt some butter in a large microwaveable bowl.

Add granulated sugar, gluten free all purpose flour, cocoa, baking powder and xanthan gum to bowl.

Blend ingredients well. Add 2 eggs and vanilla and beat them into the ingredients already in the bowl.

Fold in some chocolate chips and some marshmallows.

Line a square pan with parchment paper and spray it lightly with cooking spray.

Arrange gluten free graham crackers in bottom of  prepared pan, chocolate side up if using coated ones.

Use a rubber spatula to scrape mixture on top of the graham crackers.

Spread the batter out evenly in the pan.

Put pan on middle rack in oven. Bake for 25-30 minutes or until a toothpick inserted in center comes out almost clean.

Remove from oven.

Sprinkle more marshmallows over top of the hot brownie.

Return brownies to oven under the broiler for 2 minutes or until golden brown.

After removing from oven use a hot knife to cut through the marshmallows and into the brownie a bit to make serving size pieces.

Let cool a bit and then use parchment paper to remove brownie from the pan.

While still warm finish cutting through the brownies.

Serve warm.
