Strawberry Rhubarb Muffins - Gluten Free

Cream together some granulated sugar and margarine using an electric hand mixer.

Add in eggs and vanilla. Beat again with electric hand mixer until light and fluffy.

Quickly beat in some Strawberry Rhubarb Sauce and yogurt.

Stir in some Gluten Free 1 to 1 Baking Flour, baking soda, baking powder and salt just until combined.

Grease muffin pans.

Scoop batter into prepared muffin pans, filling halfway.

Add 1 tsp of Strawberry Rhubarb Sauce to each muffin cup on top of the batter.

Finish filling the muffin cups with the remaining batter.

Sprinkle top of each muffin with brown sugar if using.

Place in preheated 400F oven for 10 minutes and then reduce heat to 350F. Continue baking for another 10 to 15 minutes or until a toothpick inserted in the center comes out clean.

Remove from oven and allow to cool in pan for a few minutes.

Turn on sides or turn out onto cooling rack to finish cooling.
