How to Make Turnip Patties

Fold paper towel and place in a microwaveable dish. Stand turnip on its end on top of paper towel.

Put in microwave and cook on high power for 10 minutes. When done turn turnip onto it's other end and again cook for 10 minutes.

While turnip is cooking dice a yellow onion and cut up some cooked bacon.

Once turnip has been cooked on both ends remove from microwave and allow it to stand for 5 minutes.

Cut one end off of the turnip and use two forks to peel the skin down off the turnip.

Turn over and cut the other end off and finish peeling.

Place peeled turnip into a mixing bowl and mash with a potato masher.

Mix in eggs, gluten free flour and brown sugar really well.

Stir in the diced onion, chopped bacon and some pecans.

Put some olive oil into a large skillet and turn the heat to medium.

Once oil is hot use a scoop (mine was 3 tablespoons) to drop mounds of turnip into the skillet.

Flatten the mounds with a spatula to make patties.

Fry until golden brown on one side  and flip to brown the other side. About 3 - 4 minutes per side.

Transfer cooked patties to a baking sheet lined with parchment paper.

Once all patties are cooked serve them up as a side to your favourite meal.

Drizzle with maple syrup for some added flavour.
