Instant Pot Apple Cake - Gluten Free

Peel, core and cut some apples into small pieces.

Toss the apples with some cinnamon and 2 tbsp granulated sugar.

In a large mixing bowl whisk together some oil, sugar, almond milk, maple syrup, egg yolks and vanilla extract.

Add  flour, meringue power, xanthan gum, baking powder and salt and mix until well blended. The batter will be stiff.

Beat the egg whites in a separate bowl until stiff peaks form.

Fold the meringue into the batter. The batter will still be thick.

Spread half the batter into a greased 7" spring form pan and then top with half of the cut up apples.

Spread remaining batter on top of apples and finish with a layer of the remaining apples.

Cover the cake pan well with tinfoil.

Pour some water into the Pot and place the cake pan on a trivet in the Pot.

Place lid on the Instant Pot, turn the steam release handle to sealing position and set Pot to Pressure Cook High for 40 minutes.

Once the cake is done allow a Natuaral Release for 6 minutes before venting and removing the lid.

Allow cake to cool for 10 minutes before removing the sides of the spring form pan.

Once cooled slice and serve the cake.

Dress up your slice with some caramel sauce or ice cream and enjoy!
